Whether or not your team is in the Super Bowl, it’s always important to have the best snacks, the best beer, and the biggest TV. So, let us dive in to some fantastic recipes for the Big Game!

BBQ Nachos

Ingredients:

  • 4 slices of bacon, 1” pieces
  • ½ red onion, chopped
  • 1 lb. ground beef
  • Kosher salt
  • Ground black pepper
  • 1 C. BBQ sauce
  • 1 bag tortilla chips
  • 3 C. shredded cheddar
  • ¼ C. sliced scallions

Directions:

Preheat oven to 350 degrees. Fry bacon until crisp and reserve 2 Tbsp. of bacon fat. Add onion and sauté until soft. Stir in ground beef and break up while cooking. Add salt and pepper to taste. Add BBQ sauce and bring mixture to a simmer.

Spread chips out on a large baking sheet and pour the BBQ meat mixture on top. Sprinkle evenly with cheese.   Bake about 8-10 minutes, garnish with scallions.

Ranch Potato Wedges

Ingredients:

  • 3 Russet potatoes
  • 2 Tbsp. olive oil
  • 1 Tbsp. ranch seasoning
  • Kosher salt
  • Fresh ground pepper
  • 1 C. shredded cheddar
  • 4 slices bacon
  • ¼ C. finely chopped chives
  • Ranch dressing

Directions:

Preheat oven to 375 degrees. Slice potatoes in half, then into wedges. Place on baking sheet and top with olive oil, ranch seasoning, salt, and pepper. Toss until fully coated then flip skin side down. Top with cheese and bake until deeply golden and crispy, about 25/30 minutes. Fry up bacon, dry off grease, and crumble. Garnish wedges with chives, bacon, and ranch for dipping.

Chicken Wings with Angry Sauce

Ingredients:

  • 6 lbs. chicken wings (tips discarded, wings split)
  • ¼ C. Canola oil
  • Kosher salt
  • Fresh ground pepper
  • 1/3 C Gochujang (Korean chile paste)
  • 2 Tbsp. gochugaru (Korean chile powder)
  • 2 Tbsp. sugar
  • 1 Tbsp. toasted sesame oil
  • 1 Tbsp. water
  • 2 tsp. unseasoned rice vinegar
  • 2 teaspoons soy sauce
  • 2 tsp. minced peeled fresh ginger
  • 1 tsp. minced garlic
  • Sesame seeds and thinly sliced scallions for garnish

Directions:

Preheat oven to 450 degrees and cover two baking sheets with foil, then spray with non-stick cooking spray. In a large bowl, toss the wings with Canola oil and season with salt and pepper. Transfer to baking sheets and roast for 45 minutes.

In another bowl whisk the remaining ingredients except for the garnish. Then add the crispy wings to the sauce and toss to coat. Garnish with sesame seeds and scallions.

Braised Short Rib and Sweet Potato Chili

Ingredients:

  • 1 Tbsp. canola oil
  • 1 lb. boneless short ribs
  • 2 tsp. ground cumin
  • 1 tbsp. + 1 tsp. chili powder
  • 2 tsp. dried oregano
  • Kosher salt
  • 1 large onion, diced
  • 1 jalapeño, chopped
  • 1 tsp. garlic powder
  • 2 tsp. tomato paste
  • 1 15-oz. can diced tomatoes
  • 4 C. low-sodium chicken broth
  • 1 12-oz. bottle lager
  • 3 large sweet potatoes, chopped
  • Shredded cheddar for garnish
  • Sliced jalapeno for garnish

Directions:

Rub short ribs with cumin, 1 Tbsp. of chili powder, oregano, salt and pepper. Place in a pot with oil and sear 5 minutes on each side. Transfer to plate. To the same pot add onion, jalapeño, garlic powder, and remaining chili powder and cook until tender. Add tomato paste and stir for a minute. Add diced tomatoes, chicken broth, beer, and sweet potatoes and bring to a boil. Reduce heat and simmer. Slice up the short ribs and add to mixture. Let cook for about an hour and garnish with cheddar and jalapenos.

Guacamole

Ingredients:

  • 4 Avocados
  • 1/4 red onion, chopped
  • 1 tomato, diced
  • Hot salsa
  • Dashes of Hot sauce
  • Salt
  • Pepper
  • ½ Granny Smith Apple, diced
  • 1 Jalapeño, diced

Directions:

In a bowl mash avocados and add the onion, tomato, apple, and jalapeño. Then add a dollop of hot salsa, a few dashes of hot sauce, and salt and pepper to taste.
